And then it comes the pizza; it’s like poetry for us: it’s the essence of the simplicity of our cuisine. We explore the different italian traditions, from Veneto to Sicily, by experimenting with ingredients; we create a pizza that is a pleasure for everyone, even for those who suffer from celiac disease. We had tried various recipes until we finally found out the perfect dough with sourdough starter: it is delicious, light and can be eaten even by those with a gluten-free diet.
